Beer cheese dip is a rich, cheesy, and creamy dip made with beer, cheeses, and a few seasonings for dipping veggie sticks, crusty bread, pretzels, or pretzel bites in! It’s delicious served as an appetizer or as a snack! Perfect for parties, game days, and more!
What kind of beer is best for Beer Cheese Dip?
The kind of beer you use in your beer cheese dip is really a personal preference. I recommend using your favorite beer!
Stout – A stout or dark beer will give a deeper, more bitter flavor to the beer cheese.
IPA/Light Beer – A lighter beer will give a good beer flavor without the bitterness of a stout. Personally, I like to use an IPA or light beer.
Non-Alcoholic Beer – You can use a non-alcoholic beer to achieve the same beer flavor without the alcohol.

Beer Cheese Dip Ingredients
This cheesy dip recipe starts with a rue and uses two kinds of cheese.
Butter – For the rue.
Flour – For the rue to thicken the beer cheese dip.
Whole Milk – I recommend using whole milk to get the creamiest dip possible but whatever you prefer will work as well.
Beer – You can’t make beer cheese dip without beer right!?! Remember to choose a beer that you would drink.

Dijon Mustard – This brings out the sharpness in the cheddar cheese and enhances the flavor.
Seasonings – Salt and pepper to taste and a little smoked paprika to add just a hint of smokey flavor.
Cheddar Cheese – The star of the show here is the cheddar cheese. Use a sharp cheddar rather than a mild or medium cheddar for the best and richest flavor. I recommend shredding your own cheese from a block of cheese as pre-shredded cheese contains additives and preservatives and block cheese will melt best!
Cream Cheese – Just a little cream cheese really makes this dip the cheesiest creamiest dip!
Garnishes and Dippers – Sliced green onions are the perfect pop of color as a garnish and they are also great for dipping! Add some pretzels or pretzel bites, some veggie sticks such as carrots, celery and even broccoli, and crusty bread and you’re ready to go!

Cooking Method
This beer cheese dip takes about 15 minutes to make!
Melt your butter in a medium-sized saucepan over medium heat to make your rue first.
Add the flour and cook, stirring for about 1-2 minutes. This cooks the flour taste out of the rue. It will turn into a thick paste.
Slowly pour in the milk, stirring constantly, and continue cooking until the mixture thickens slightly. About 1-2 more minutes.

Stir in the beer, dijon mustard, and smoked paprika. Cook for another minute.
Then add the cream cheese and shredded sharp cheddar cheese.
Continue cooking, stirring constantly, until the cheese is fully melted.
Taste and season with salt and pepper as needed.
Transfer to a serving dish and top with fresh sliced green onions.
Serve with pretzels, pretzel bites, slices of veggies, and/or crusty bread for dipping!

Instructions

- Continue cooking for about 1-2 minutes, stirring constantly, until the mixture thickens slightly.
- Stir in the beer, Dijon mustard, and smoked paprika. Cook, stirring for one minute.
- Stir in the cream cheese and shredded sharp cheddar cheese and cook until the cheese has melted.
- Taste and season with salt and pepper, to taste.
- Transfer to a serving bowl and top with fresh sliced green onions.
- Serve with pretzels, pretzel bites, crusty bread, and/or veggie sticks for dipping.
