My kids love granola bars and I love stocking their snack bin with these delicious sugar-free Pistachio Granola Bars! They not only make a great snack but a quick on the go breakfast as well!

Ingredients

I love how pantry friendly these granola bars are! All of these ingredients can be kept on hand whenever you run out of pistachio granola bars!

Rolled Oats

Shelled Pistachios

Shredded Coconut – You’ll want to use unsweetened shredded coconut!

Sesame Seeds – Yes, I keep these on hands for lots of fun things!

Dried Cranberries – Like Craisins! You can find them near the raisins in your local grocery store. Be sure to choose an unsweetened version.

Salt – Just a bit to taste.

Coconut Oil – This is such a healthy oil to use in these granola bars!

Honey or Agave Syrup – I love that these pistachio granola bars use honey or agave as a sweetener instead of sugar!

Vanilla Extract – Please use pure vanilla extract!

How to Make Pistachio Granola Bars

Homemade granola bars are actually far easier to make than you think! I used to be intimidated by the thought of making my own but it’s actually pretty simple!

Preheat your oven to 350° F and line a half-sheet pan with a piece of parchment paper.

In a large mixing bowl, combine the dry ingredients – oats, pistachios, coconut, sesame seeds, dried cranberries, and salt.

Pour the honey, coconut oil, and vanilla over the dry ingredients and mix until combined and evenly coated.

Press the granola bar mixture into the prepared sheet pan and smooth out the top as best you can. I use my hands for this!

Bake for 18-20 minutes or until lightly golden brown.

Remove from the oven and place the pan on a baking rack to cool before slicing. Be sure to allow the pistachio granola bars to cool completely before slicing!

  • 2-1/4 cup rolled oats
  • ¾ cups shelled pistachios roughly chopped
  • ½ cups unsweetened shredded coconut
  • ¼ cups sesame seeds
  • 1 cups dried unsweetened cranberries like Craisins
  • ¼ teaspooon salt
  • 5 Tablespoon coconut oil melted
  • ¼ cups honey or agave syrup
  • 2 teaspoon pure vanilla extract

Instructions
 

  • Preheat the oven to 350° F. Line a half-sheet pan with a piece of parchment paper.
  • In a large bowl, combine the oats, pistachios, coconut, sesame seeds, cranberries, and salt.
  • Pour in the coconut oil, honey, and vanilla. Mix until all the ingredients are combined and evenly coated.

  • Transfer into the oven and bake 18-20 minutes until light golden brown.
  • Remove from oven and let cool completely in the pan on a baking rack before slicing.
  • Store leftover bars in an air-tight container at room temperature for up to 7 days.
