Homemade granola bars are a wonderful snack, on the go treat, or even for a quick breakfast! The combination of pistachios, dried cranberries, and coconut make them irresistible.

unsweetened shredded coconut

sesame seeds

coconut oil
melted

honey or agave syrup

teaspoon
pure vanilla extract
Instructions
Preheat the oven to 350° F. Line a half-sheet pan with a piece of parchment paper.
In a large bowl, combine the oats, pistachios, coconut, sesame seeds, cranberries, and salt.
Pour in the coconut oil, honey, and vanilla. Mix until all the ingredients are combined and evenly coated.
Press the granola bar mixture into the prepared pan and smooth out the top.
Transfer into the oven and bake 18-20 minutes until light golden brown.
Remove from oven and let cool completely in the pan on a baking rack before slicing.
Store leftover bars in an air-tight container at room temperature for up to 7 days.
