Quick and Easy Breakfast Burritos

Breakfast burritos are always a hit at my house! My kids love a full breakfast with all the fixings but sometimes those busy mornings get the best off me! This easy and quick breakfast burrito recipe is the perfect busy morning meal the whole family will love.

If your family is anything like mine, mornings are busy to say the least! Kids to get off to school, chores to get done, and all the things that it takes to get a family ready for the day! Breakfast is only one of those many things and while I’m guilty of grabbing a box of cereal and the milk, I do prefer to make my kids something hearty like these easy breakfast burritos or this sausage and potato breakfast casserole.

Ingredients

These simple ingredients come together quickly to make a satisfying and hearty breakfast that’s sure to get you and your kids through to lunch!

Olive Oil

Milk

Green Onions

Green onions, bell peppers, shredded cheese, eggs, milk, olive oil, and tortillas artfully displayed on a counter.

Shredded Cheese – I like Monterey Jack, Cheddar, or Pepper Jack.

Salt & Pepper, to taste

Making Breakfast Burritos

This only take a few minutes to whip up making them perfect for those busy mornings!

Grab a non-stick skillet and over medium-high heat add the olive oil. Once heated, saute the chopped peppers and green onions until crisp-tender, about 2-3 minutes. Stir occasionally.

Meanwhile, beat the milk, eggs, salt, and pepper in a medium sized bowl with a fork or whisk.

Pour the eggs over the sautéed veggies and cook, stirring until the eggs are set but still moist or about 4-6 minutes.

Once the eggs are done, spoon the mixture into each tortilla, add some shredded cheese and roll up the tortilla.

Tips, Tricks & Variations

Here’s a few ideas and tips to elevate your breakfast burritos!

  • Heat your tortillas to make rolling them easier!
  • Add some cooked ground sausage or bacon to the egg mixture for added protein.
  • Serve with a side of salsa, salsa verde, and hot sauce for those that like a little heat!
  • You can make these ahead of time, wrap them in tin foil and store in the fridge for up to 3-5 days. I love doing this for camping trips!

Ingredients
  

  • 1 Tablespoon olive oil
  • 4 medium green onions sliced
  • 1-1/2 medium Green, red, or yellow pepper chopped
  • 6 large eggs
  • 2 Tablespoons milk
  • Salt & Pepper to taste
  • 4 flour tortillas 7 to 8 inches in diameter, heated
  • ½ cup shredded Cheddar or Monterey Jack cheese

Instructions
 

  • Heat olive oil in 10-inch nonstick skillet over medium-high heat.
    Sauté onions and bell peppers for 2 to 3 minutes, stirring occasionally, until crisp-tender.
  • Beat eggs, milk, salt and pepper in medium bowl with fork or wire whisk until well mixed.
    Pour egg mixture over vegetables in skillet. Reduce heat to medium. Cook 4 to 6 minutes, stirring frequently until eggs are set but still moist.
  • Spoon egg mixture onto warm tortillas, sprinkle with cheese, and roll up the tortillas.
  • Enjoy!
