I’m always trying to make copycat recipes I can enjoy whenever I want, and this healthier iced cinnamon dolce latte is one of my top faves! It has all the cinnamon sweetness of the Starbucks version but better ingredients and less sugar. Plus, it’s quick, easy, and way cheaper than a daily coffee shop visit.
I started my copycat recipe journey with a caffeine-free version of the Starbucks Strawberry Açaí Refresher and it was a hit! Now I’m on a mission to recreate more of my faves with a healthier twist.

- 1 cup brewed coffee or espresso (cooled)—If using a French press, use approximately 2 tablespoons of ground coffee.
- 1/2 cup unsweetened almond milk—or any milk that you like.
- 1-2 tablespoons carob syrup or honey – Adjust based on your sweetness preference.
- 1/2 teaspoon ground cinnamon—plus extra for garnish.
- 1/4 teaspoon vanilla extract—adds a hint of smooth sweetness.
- Ice cubes – To chill and refresh your latte.
- Optional: Whipped cream—for an indulgent finishing touch.

Step-by-Step Instructions
1. Brew the Coffee
- Start by brewing your favorite coffee using a French press or an espresso machine. If using a French press, 2 tablespoons of ground coffee will give you a rich and balanced flavor.
- If you prefer espresso, pull one or two shots, depending on how bold you like your latte.
- Let your coffee cool completely—this step is key to keeping your drink perfectly iced without watering it down.


2. Mix the Ingredients
- Take a large glass filled with ice and pour in your cooled coffee or espresso.

- Add unsweetened almond milk, carob syrup or honey, ground cinnamon, and vanilla extract.

- Stir everything together until well combined, letting the warm cinnamon and vanilla blend beautifully with the coffee.
3. Adjust
- Give your latte a taste and adjust it to your liking—add more honey for sweetness or a pinch more cinnamon for extra spice.
- If you love a stronger coffee kick, you can mix in another half-shot of espresso.
