- Dried Cranberries – Like Craisins! You can find them near the raisins in your local grocery store. Be sure to choose an unsweetened version.
- Salt – Just a bit to taste.
- Coconut Oil – This is such a healthy oil to use in these granola bars!
- Honey or Agave Syrup – I love that these pistachio granola bars use honey or agave as a sweetener instead of sugar!
- Vanilla Extract – Please use pure vanilla extract!

How to Make Pistachio Granola Bars
Homemade granola bars are actually far easier to make than you think! I used to be intimidated by the thought of making my own but it’s actually pretty simple!
- Preheat your oven to 350° F and line a half-sheet pan with a piece of parchment paper.
- In a large mixing bowl, combine the dry ingredients – oats, pistachios, coconut, sesame seeds, dried cranberries, and salt.
- Pour the honey, coconut oil, and vanilla over the dry ingredients and mix until combined and evenly coated.
- Press the granola bar mixture into the prepared sheet pan and smooth out the top as best you can. I use my hands for this!
- Bake for 18-20 minutes or until lightly golden brown.
- Remove from the oven and place the pan on a baking rack to cool before slicing. Be sure to allow the pistachio granola bars to cool completely before slicing!
