Spray the inside of the slow cooker with non-stick cooking spray for easier cleanup.
Place the thawed chicken breasts in the bottom of the slow cooker and pour half of the chicken broth over them.
Mix the cream of chicken soup, stuffing mix, and the remaining chicken broth until well combined.
Spread the stuffing mixture evenly over the top of the chicken breasts in the slow cooker.
Cook on high for 3-4 hours or low for 5-6 hours.
To serve, shredded the chicken and mix it with the stuffing or scoop out portions of the chicken and stuffing.
Garnish with fresh chopped chives or Italian parsley and serve with a side salad or roasted vegetables.
Notes
You can substitute the chicken broth with water if you do not have chicken broth on hand.The cream of chicken soup can be substituted with cream of mushroom soup or your favorite cream soup.
