Ingredients
For the cookies
1csugar
1cunsalted buttersoftened
1egg
1tvanilla
3cflour
For the icing
4csugardivided
2Tmeringue powder
2tvanilladivided
½-¾cwaterdivided
2Tcorn syrup
To decorate
Blackgreen, blue and red food coloring
Instructions
Preheat oven to 350°F. Line baking sheets with parchment.
Cream butter and sugar. Beat in egg and vanilla.
Mix in flour until dough forms. Roll out to ½ inch thick.
Cut circles with cookie cutter. Place on baking sheets.
Bake 10–12 minutes, until edges are set. Cool completely.
Make icing: beat 2 cups sugar, meringue powder, vanilla, and water until stiff. In another bowl, mix 2 cups sugar, corn syrup, vanilla, and water until smooth. Combine both mixtures and adjust with sugar or water until icing is smooth.
Tint icing with food coloring (red, blue, green, black).
Pipe white circle, then iris color, then black pupil. Add small white dot for shine.
