Cherry Vanilla Soda Syrup

A homemade cherry syrup recipe made with fresh cherries and vanilla, perfect for mixing with soda water, Coke, cocktails, or mocktails.

Ingredients

fresh cherries
300 g, washed and pitted
1 ¼
cups
granulated sugar
250 g
1 ¼

water

vanilla extract

Soda water
Fresh lemon juice

Instructions
Rinse the cherries, remove the stems, and pit them. Coarsely chop the cherries into halves and quarters.
In a medium saucepan, combine the sugar and water over medium heat. Bring to a simmer, swirling the pan a couple of times to dissolve the sugar.
Add the cherries and return the mixture to heat.
Bring to a boil. Cook for 10 to 12 minutes, stirring occasionally and watching carefully so the syrup does not boil over.
Once the cherries are mushy and the mixture is syrupy, remove from heat.
Allow the mixture to rest for 20 minutes.
Strain out the solids through a fine mesh sieve. Stir in the vanilla extract.
Store the syrup in a glass jar or bottle in the refrigerator.
To serve, mix 1 1/2 to 2 fl oz / 42 to 56 ml syrup with 4 to 5 fl oz / 112 to 140 ml soda water. Add a squeeze of lemon juice if desired.
Notes
Keeps for up to 1 week in the refrigerator.
Also great in cocktails or mixed with Coke for cherry vanilla Coke.
Use a larger saucepan if your syrup tends to foam up while boiling.
