Cook the bacon in a medium skillet over medium-low heat until crispy. Transfer to a paper towel lined plate to cool and then break into small pieces. Set aside.
Wash the potatoes and slice then into 1/4 inch thick slices.
Dice the chives and set aside.
Lightly brush each potato slice with olive oil and season with salt and pepper.
Arrange the lightly oiled potato slices in a single layer in the air fryer basket.
Cook at 400°F for 17-18 minutes or until cooked through and lightly browned. Shake the basket once about halfway through cooking.
Top each potato slice with cheese, then a bit of bacon and a few chives.
Cook for an additional 2 minutes or until the cheese in melted.
Remove from the air fryer and serve hot with sour cream for dipping!
