Instructions
In a large mixing bowl or the bowl of a standing mixer, add the heavy whipping cream, one tablespoon of honey, and 1/2 teaspoon of the vanilla extract. Mix until light and fluffy, about 2-3 minutes. Be sure to scrape the sides of the bowl to ensure all of the ingredients are incorporated. Set aside.
In another large mixing bowl, combine the cream cheese, peanut butter, 2 tablespoons of honey, the remaining vanilla extract, and salt. Beat until light and fluffy, about 2-3 minutes.
Gently fold 2/3 of the whipped cream into the peanut butter mixture until completely combined.
Evenly divide the peanut butter mousse between 4 dessert bowls or parfait glasses. Place the serving dishes with the mousse in the fridge and chill for 10 minutes. Reserve the remaining whipped cream for serving by placing in the fridge.
Just before serving, place the chocolate in a microwave safe bowl and heat for 30 seconds. Stir and heat in 15 second intervals until completely melted. Once the chocolate is completely melted stir in the remaining honey until well combined. Set aside.
To serve, remove the peanut butter mousse from the fridge and top each serving with a spoonful of the remaining whipped cream, drizzle with a spoonful of melted chocolate and garnish with a few chopped peanuts! Serve immediately.
